Florida culinary cops laid down the law last month to the tune of roughly $231,000 for more than 700 health and safety violations at 240 food establishments.

The latest fines from January 1, 2005 through September 30, 2007 are posted for your perusal at Fined Dining.

The state lightened up slightly compared to August when it collected closer to $250,000 for more than 800 violations at 266 establishments.

We also found a few surprises in the September data. Our map of Florida’s 50 most-fined is going to change in some interesting ways when we update it Friday. Look for a couple of Tampa Bay newcomers. We’ve seen the data, of course, but we’ve asked the state to fill in some blanks before we post. We strive for accuracy.
